Yes you can cook your own candy. Perhaps the easiest is fudge. No dart jokes please.
You need a large ceramic pot to cook in. I use a five quart Corning Ware pot. You need a recipe to follow - go now and Google a good one. Perhaps the hardest part is figuring out what the heck they mean by a "soft boil."
I find that this can be done without a thermometer by sight. For the first few times you will need to use a candy thermometer. No I am not kidding, this thermometer reads into the 300-400 degree F range.
Yes I did say 300 to 400 degrees Fahrenheit. This stuff gets serious HOT. Do not spill it on yourself as it will burn, I know from experience just how bad it feels.
Any way the soft boil point will let you see just why you need a Large pot to boil what is about 2 quarts of supplies.
I have found that you have to keep the heat on the candy when adding the chocolate pieces and the marshmallow fluff. Light heat and continuous stirring makes a very smooth candy. Add the vanilla after you turn off the heat to preserve the flavor.
I have seen people lock doors after one taste of home made fudge. They do not want to share it with anyone and will fight to keep it to themselves.
OK so now I ask our gourmet cook what candy is his favorite to make? You know who you are - share with us your secrets to good candy.

For that much work, I'd rather pay $1 for a box of gum

Allright, here we go, if you want to cook candy, we will cook candy... but it's going to be something that I can eat and actually this recipe needs NO cooking!
Energy Bars-Unbaked
By: American Running Association Running and Fitness
1 cup rolled oats 1/2 cup oat bran 1/2 cup vanilla protein power 1 cup crunchy peanut butter (I substitue almond butter because I'm allergic to peanuts) 1 cup raisins or dried fruit of your choice/chopped 1 cup chocolate chips 1 cup brown rice syrup
All these things can be found at any health food store, and in most of the stores that now have sections for the dried organic food stuff. Mix all ingredients well. Pat out on wax paper into a large rectangle. Take a large knife and divide into bar shaped rectangles. Put these in Ziploc bags and freeze until you need them.
Simple and yummy!

You want something good, I've got something good.
Using whichever recipe you wish, make home-made fudge. Like B8 kind've described (my method is a bit different though). Now pour the fudge into a cookie or brownie sheet and let it cool. While the fudge is cooling, using whichever reicpe you wish, I like an old family recipe which I refuse to share. I don't want some company stealing my recipe for mass marketing purposes, Make cookie dough. Now remember, you're going to add the home-made fudge to the home-made cookies, so choose the type of cookies you make. I don't suggest peanut butter or co-co nut. (yes i know it's spelled wrong) Now that the fudge has cooled, cut part of it into little bitty squares, enough to fill the dough with lots of fudge pieces. Place cookies on baking pan, and cook. The fudge will melt (and if your pieces are too big) make one hell've mess. You now have REAL home-made Fudge Cookies, plus extra fudge laying around for normal eatting. I also like to make Snikerdoodles and other forms of candy/cookies with the fudge. Personally, I do brownies with the fudge, because Fudge Brownies are the best thing in the world, especially when the fudge is home-made and to die for.

Caramel is made by boiling a sugary syrup down until it's almost soild and then letting it set. Typically corn syrup is used....

That isn't how caramel is made... you need cream, too Otherwise you have a chewy (or hard, depending on how hot it gets) sugar candy... that is entirely sugar... and has no flavor... besides sugar...
